Although I firmly believe in intuitive eating and being present during your meals, sometimes a girls just gotta mindlessly snack. In this case, coming up with a few simple recipes that are perfect for munching on but don't lead to an excessive calorie binge (not that I'm too concerned with calories) is crucial! You gotta find the right blend of ingredients that satisfy those snacking taste buds, and is portable to take on the go. What better way to combine these factors than by coming up with a delicious and healthy popcorn recipe!
My friends, let me introduce you to Lemon Rosemary Popcorn. It may seem a bit fancy and a little intriguing, but don't be afaid by the combination of flavors. This popcorn recipe is sure to please any snackaholic!

Rosemary Lemon Popcorn
1 /4 cup organic popcorn kernels
1/4 cup pepitas
1 tablespoon coconut oil
1 tablespoon ghee/grass-fed butter; melted
1 tablespoon rosemary; chopped
1/2 lemon; zested
1/4 teaspoon salt +
For those of you who have never ventured away from the conventional method of popping popcorn in the microwave, this might seem a bit odd. But no need to worry, it's incredibly simple to make and much healthier since you're avoiding many of the toxic preservatives used in microwavable popcorn as well as the radiation from the microwave.
1. In a large metal-mixing bowl, combine salt, coconut oil, and popcorn kernels.
2. Cover with aluminimum foil and poke 8-10 holes in the top.
3. Place over a medium-high heat and shake the bowl with tongs.
4. Continue shaking until all the kernels have been popped. Roughly 3-4 minutes.
5. Remove aluminum foil and add in the remainder of the ingredients: ghee/grass-fed butter, pepitas, rosemary, and lemon zest. If you like your popcorn saltier, this would be the time to add additional salt.
